Garlic Pepper Prawns
Ingredients
- 350 gr prawns
- 3 pieces garlic
- 1 ts black papper
- 1 ts salt
- 2 ts oil
- 1 ts fresh(or dried) basil leaves
Description
- Trim the prawn whiskers and devein the prawns by making a slit along the centre of the back (leaving the shell intact).Remove the black intestinal tract and rinse the prawns
- Mix the garlic, pepper and salt together, then season the prawns with the mixture. Set aside fpr 30 minutes or more…
- Heat the oil in a wok and quickly sauté the prawns until they turn pink
- That much easy peasy; it’s done…ENJOY!
Kebab Ali Nazik

There is a wide range of Turkey dishes that can be broiled or barbecued (kebap).Kebab Ali Nazik comes from the city of Gaziantep, famed for it’s excelent pistachios.
This dish of lamb mince ,eggplant and yoghurt is notable for it’s typical Turkish tast.What is special about this classic in Turkish cuisine is the manner in which the eggplant is prepared.It’s full flavor develops when it is pureed and combined with yogurt.Let’s have a look at the detailed preperation;
Ingredients for 4 portions:

- 4 pieces eggplant
- 4 clove garlic
- 4 table spoon yogurt
- Salt as you wish
- Black paper as you wish
- 1 piece onion
- 2 pieces tomatoes
- 4 pieces green chilies
- 50 gram butter (but I prefer 1 table spoon extra virgin olive oil to be able to make it more healthy)
- 600 gr. lamb mince meet
For the sauce
- 50 gr. butter
- 1 tea spoon chilly red pepper
- 1 tea spoon red pepper
For decoration
- 1 piece cherry tomato
- 2 pieces spring onion
- 1 pinch parsley
Description
1-Firstly, we need to roast the eggplants . There are two different techniques to roast the eggplants ;
- Firstly you need to bore the eggplants with using the folk in few different places (this is for eggplants to cook easier and drain the bitter water away) ,and put them on the oven tray and roast .
- The other way, you can cover the eggplants with the aluminum foil and cook them on top of the cooker but again do not forget to bore the eggplants with using the folk .
- When it comes to the difference of these two techniques ; when you roast the eggplants in the oven , the inside of the eggplants fade to black but if you use the aluminum foil and roast them on the oven ,the inside of the eggplants remain white (of course if you buy the good quality eggplantsJ ) and this difference effect the appearance of the meal.
After you completed the roasting , you need to remove the skin and chop the flesh into small pieces and mash with a folk.
2.You need to peel and crush the garlic ,and put in a small bowl and mix with the yogurt. Then add the mashed eggplants , and season with the salt and pepper. We need to puree all of them properly.
3. Chop the onion, green pepper and tomatoes in to very small pieces .
4. Melt the butter (or use extra virgin olive oil) in a pan and add the onion and cook it till it turns to pinky color .
5. Then add the minced lamp meet and cook together with onion aprox. 10 min.
6. Add the chopped tomatoes and green pepper and cook 10 more minutes .
7. For the sauce , melt the butter in a pan , stir the chilly red pepper
And the red pepper flakes .Here the timing is so important ! After the red peppers gives the color to the butter , you need to take the pan away from the cooker. Otherwise the butter would burn and the pepper would turn to black colors.
8. First arrange the eggplant puree on the plate ,and top with the lamp sauce. Garnish with cherry tomatoes , parsley , and chopped spring onion . At the last, add little by little the red pepper sauce on top of the meal with using the spoon .
Now it is ready to serve.
